Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 large egg beaten
Filling
  • 2 cups fresh or frozen cherries pitted
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a mixing bowl, combine flour, sugar, and salt. Add softened butter and mix until crumbly.
  3. Stir in the beaten egg until the mixture forms a dough.
  4. Press the dough evenly into the bottom of the prepared baking dish.
Prepare the Filling
  1. In a saucepan over medium heat, combine cherries, sugar, cornstarch, lemon juice, and vanilla extract.
  2. Cook until the mixture starts to bubble and thicken, about 5-7 minutes.
  3. Remove from heat and let cool slightly.
Assemble and Bake
  1. Pour the cherry filling over the crust in the baking dish.
  2. Bake in the preheated oven for 25-30 minutes or until the filling is bubbly and the crust is golden.
  3. Allow to cool before slicing into bars.
