Ingredients
  

Zucchini Noodles
  • 4 medium zucchini Spiralized
  • 2 tablespoons olive oil For sautéing
  • 2 cloves garlic Minced
  • 1 cup cherry tomatoes Halved
  • 1 teaspoon salt To taste
  • 1/2 teaspoon black pepper To taste
  • 1/4 cup fresh basil Chopped
  • 1/4 cup parmesan cheese Grated, optional

Method
 

Prepare Zucchini
  1. Spiralize the zucchini using a spiralizer to create noodle shapes.
Sauté
  1. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add the spiralized zucchini and cherry tomatoes to the skillet. Season with salt and pepper.
  3. Cook for 3-5 minutes, stirring occasionally, until the zucchini is tender but still slightly firm.
Serve
  1. Remove from heat and stir in chopped basil. Serve immediately, topped with grated parmesan if desired.
