Zucchini Lasagna

A healthy and delicious twist on traditional lasagna, using zucchini slices instead of pasta for a low-carb option.

Ingredients
  

Vegetables
  • 3 medium zucchini sliced lengthwise
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium bell pepper chopped
  • 2 cups spinach fresh
Meat Sauce
  • 1 pound ground beef or turkey
  • 1 can crushed tomatoes 28 oz
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Cheese Mixture
  • 15 ounces ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 1/2 cup Parmesan cheese grated
  • 1 large egg
  • 1 tablespoon fresh basil chopped

Method
 

Prepare the Zucchini
  1. Preheat the oven to 375°F (190°C). Slice the zucchini lengthwise into thin strips and sprinkle with salt. Let sit for 10 minutes to draw out moisture, then pat dry.
Make the Meat Sauce
  1. In a frying pan, cook the ground beef over medium heat until browned. Add onion, garlic, and bell pepper; sauté until soft. Stir in crushed tomatoes, Italian seasoning, salt, and pepper. Simmer for 10 minutes.
Prepare the Cheese Mixture
  1. In a bowl, combine ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, and basil. Mix well.
Assemble the Lasagna
  1. In a baking dish, spread a layer of meat sauce, followed by a layer of zucchini slices, then a layer of the cheese mixture. Repeat layers, finishing with meat sauce and remaining mozzarella on top.
Bake
  1. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
Serve
  1. Let the lasagna cool for 10 minutes before slicing. Serve warm.

Notes

For a vegetarian version, omit the ground beef and add more vegetables like mushrooms or eggplant.
