Ingredients
  

Fritters
  • 2 medium zucchini grated
  • 1 teaspoon salt for draining zucchini
  • 1 cup all-purpose flour
  • 1 large egg beaten
  • 1 cup feta cheese crumbled
  • 1 teaspoon black pepper to taste
  • 2 tablespoons fresh parsley chopped
  • 1 cup vegetable oil for frying

Method
 

Prepare Zucchini
  1. Grate the zucchini and place it in a mixing bowl. Sprinkle with salt and let it sit for 10 minutes to draw out moisture.
Mix Ingredients
  1. After 10 minutes, squeeze out excess moisture from the zucchini using paper towels. In the same bowl, add flour, beaten egg, feta cheese, black pepper, and parsley. Mix until well combined.
Fry Fritters
  1. Heat vegetable oil in a skillet over medium heat. Scoop about 2 tablespoons of the mixture and flatten it into a patty. Fry until golden brown, about 3-4 minutes per side. Repeat with remaining mixture.
Serve
  1. Remove fritters from the skillet and drain on paper towels. Serve warm with your favorite dipping sauce.
