Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs beaten
  • 2 cups zucchini grated
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, combine the dry ingredients: flour, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, mix the wet ingredients: sugar, vegetable oil, eggs, grated zucchini, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Baking
  1. Pour the batter into the prepared loaf pan.
  2. Bake in the preheated oven for 60 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
