Prepare the Dough
- In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.
- In a separate bowl, mix flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth.
- Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
Assemble and Cook
- Preheat the wood-fired oven to around 700°F (370°C).
- Once the dough has risen, punch it down and divide it into 2 equal portions.
- Roll out each portion into a 10-inch round on a floured surface.
- Spread crushed tomatoes on the dough, leaving a small border. Top with mozzarella, basil, and a drizzle of olive oil.
- Using a pizza peel, transfer the pizza to the oven and cook for 8-10 minutes until the crust is golden and cheese is bubbly.
- Remove from the oven, let cool slightly, slice, and serve.
