  • 1 lb boneless, skinless chicken breasts diced
Beans
  • 2 cans white beans drained and rinsed
Vegetables
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium green bell pepper chopped
  • 1 medium jalapeño seeded and chopped
Liquids
  • 4 cups chicken broth
  • 1 cup sour cream for serving
Spices
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tsp oregano
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste

Method
 

Cooking the Chicken
  1. In a large pot, heat a tablespoon of oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
Sautéing Vegetables
  1. Add the chopped onion, garlic, green bell pepper, and jalapeño to the pot. Sauté for about 5 minutes until the vegetables are softened.
Adding Ingredients
  1. Stir in the white beans, chicken broth, cumin, chili powder, oregano, salt, and black pepper. Bring to a boil.
Simmering
  1. Reduce the heat to low and let the chili simmer for about 20 minutes, allowing the flavors to meld.
Serving
  1. Serve hot, topped with a dollop of sour cream if desired.
