Ingredients
  

  • 2 medium Onions chopped
  • 3 medium Carrots chopped
  • 2 stalks Celery chopped
  • 2 medium Potatoes peeled and chopped
  • 3 cloves Garlic minced
  • 1 teaspoon Thyme fresh or dried
  • 1 tablespoon Parsley for garnish
  • 4 cups Vegetable stock or chicken stock homemade preferred
  • 1 cup Cream or milk for richness
  • 1 cup Bacon or ham hock for smoky flavor

Method
 

  1. In a large pot, add chopped onions, carrots, celery, potatoes, and minced garlic, and sauté until softened.
  2. Add thyme and stock to the pot. Bring to a boil, then reduce heat and let simmer until the vegetables are cooked through.
  3. Stir in cream or milk and bacon or ham hock. Simmer for an additional 5-10 minutes.
  4. Garnish with parsley before serving.
