Ingredients
  

Pie Crust
  • 1 pre-made pie crust or homemade
Filling
  • 4 cups sliced tomatoes fresh, preferably heirloom
  • 1 cup shredded mozzarella cheese or any cheese of choice
  • 1 cup mayonnaise preferably full-fat
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder

Method
 

Prepare the Crust
  1. Preheat the oven to 375°F (190°C). Place the pie crust in the pie dish and set aside.
Make the Filling
  1. In a mixing bowl, combine sliced tomatoes, mozzarella cheese, mayonnaise, basil, parsley, salt, black pepper, and garlic powder. Mix well.
Assemble the Pie
  1. Pour the filling mixture into the prepared pie crust, spreading it evenly.
Bake
  1. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and bubbly.
Serve
  1. Allow the pie to cool for a few minutes before slicing. Serve warm or at room temperature.
