Ingredients
  

Cake Base
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 1 cup milk room temperature
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
Frosting and Toppings
  • 2 cups heavy whipping cream chilled
  • 1/4 cup powdered sugar
  • 1 cup mixed fresh fruits such as strawberries, blueberries, and kiwi

Method
 

Cake Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Add softened butter, milk, eggs, and vanilla extract. Beat with an electric mixer on medium speed for 2 minutes.
  4. Divide the batter evenly between the prepared pans.
  5. Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Frosting and Assembly
  1. In a mixing bowl, whip the chilled heavy cream with powdered sugar until stiff peaks form.
  2. Place one cake layer on a cake stand. Spread a layer of whipped cream on top and add a layer of mixed fresh fruits.
  3. Top with the second cake layer and frost the top and sides with the remaining whipped cream.
  4. Decorate with additional fresh fruits on top.
  5. Slice and serve chilled.
