Ingredients
  

Vegetables
  • 1 large bell pepper diced
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 2 cups vegetable broth
Protein
  • 1 lb ground beef or turkey
Grains
  • 1 cup rice uncooked
Spices
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1 tsp black pepper

Method
 

Preparation
  1. In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the diced bell pepper, onion, and garlic to the skillet and sauté for 3-4 minutes until softened.
Cooking
  1. Transfer the cooked beef and vegetables to the crockpot.
  2. Add the diced tomatoes, vegetable broth, rice, Italian seasoning, salt, and black pepper to the crockpot.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours until the rice is tender.
