Ingredients
  

Stuffing
  • 1 lb ground beef 80/20 blend recommended
  • 1 cup cooked rice white or brown rice
  • 1 cup diced tomatoes canned or fresh
  • 1 small onion finely chopped
  • 1 clove garlic minced
  • 1 tsp Italian seasoning
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 4 green bell peppers tops cut off and seeds removed
Topping
  • 1 cup shredded cheese cheddar or mozzarella

Method
 

Prepare the Filling
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add onion and garlic to the skillet and sauté until softened.
  4. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well and remove from heat.
Stuff the Peppers
  1. Place the green bell peppers upright in a baking dish.
  2. Fill each pepper with the beef and rice mixture, packing it down gently.
  3. Top each stuffed pepper with shredded cheese.
Bake
  1. Cover the baking dish with aluminum foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
  3. Let cool for a few minutes before serving.
