Ingredients
  

Vegetables
  • 1 medium butternut squash peeled and cubed
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 cups vegetable broth
  • 1 cup carrots sliced
  • 1 cup celery chopped
Seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground nutmeg
Cream
  • 1/2 cup heavy cream for garnish

Method
 

Prepare the Vegetables
  1. In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté until softened, about 5-7 minutes.
  2. Add the cubed butternut squash and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the squash is tender.
Blend the Soup
  1. Using a blender, carefully puree the soup until smooth. You may need to do this in batches.
  2. Return the pureed soup to the pot and stir in the seasonings: salt, pepper, cumin, and nutmeg. Heat through.
Serve
  1. Ladle the soup into bowls and drizzle with heavy cream for garnish. Serve hot.
