Method
Prepare the Meatloaf
- In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, egg, onion, garlic, Worcestershire sauce, smoked paprika, salt, and black pepper. Mix until just combined.
- Shape the mixture into a loaf and place it in a loaf pan.
Prepare the Topping
- In a small bowl, mix together ketchup, brown sugar, and mustard. Spread the mixture evenly over the top of the meatloaf.
Smoke the Meatloaf
- Preheat the smoker to 225°F (107°C). Place the meatloaf in the smoker and cook for about 2 hours, or until the internal temperature reaches 160°F (71°C).
Rest and Serve
- Remove the meatloaf from the smoker and let it rest for 10 minutes before slicing. Serve warm.
