Ingredients
  

Meatloaf Base
  • 1 lb ground beef preferably 80/20 for moisture
  • 1 lb ground pork
  • 1 cup breadcrumbs plain or seasoned
  • 1 large egg beaten
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp smoked paprika
  • 1 tsp salt
  • 1 tsp black pepper
Topping
  • 1/2 cup ketchup for glaze
  • 2 tbsp brown sugar
  • 1 tbsp mustard

Method
 

Prepare the Meatloaf
  1. In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, egg, onion, garlic, Worcestershire sauce, smoked paprika, salt, and black pepper. Mix until just combined.
  2. Shape the mixture into a loaf and place it in a loaf pan.
Prepare the Topping
  1. In a small bowl, mix together ketchup, brown sugar, and mustard. Spread the mixture evenly over the top of the meatloaf.
Smoke the Meatloaf
  1. Preheat the smoker to 225°F (107°C). Place the meatloaf in the smoker and cook for about 2 hours, or until the internal temperature reaches 160°F (71°C).
Rest and Serve
  1. Remove the meatloaf from the smoker and let it rest for 10 minutes before slicing. Serve warm.

Notes

For added flavor, you can incorporate chopped herbs like parsley or thyme into the meat mixture.
