Method
Prepare the Ribs
- Remove the membrane from the back of the ribs and pat them dry with paper towels.
- In a bowl, mix all dry rub ingredients together.
- Generously apply the dry rub to both sides of the ribs, ensuring even coverage.
Preheat the Grill
- Preheat the Pit Boss pellet grill to 225°F (107°C).
Smoke the Ribs
- Place the ribs on the grill grates bone side down and close the lid.
- Smoke the ribs for 3 hours, maintaining the temperature.
Wrap and Continue Cooking
- After 3 hours, remove the ribs and wrap them tightly in aluminum foil.
- Return the wrapped ribs to the grill and cook for an additional 2 hours.
Glaze and Finish
- After 2 hours, carefully unwrap the ribs and brush them with BBQ sauce.
- Return the ribs to the grill for 30 minutes to set the sauce.
Serve
- Remove the ribs from the grill, let them rest for 10 minutes, then slice and serve.
