Ingredients
  

Soup Base
  • 1 lb boneless, skinless chicken breasts
  • 1 can black beans rinsed and drained
  • 1 can corn rinsed and drained
  • 1 can diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
Toppings
  • 1 cup tortilla strips for garnish
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream optional
  • 1/4 cup fresh cilantro chopped, for garnish

Method
 

Prepare the Soup
  1. Place the chicken breasts in the slow cooker.
  2. Add the black beans, corn, diced tomatoes, chicken broth, cumin, chili powder, garlic powder, onion powder, salt, and black pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6 hours or high for 3 hours.
Finish and Serve
  1. Once cooked, shred the chicken in the slow cooker using two forks.
  2. Stir to mix the shredded chicken back into the soup.
  3. Serve hot, garnished with tortilla strips, shredded cheese, sour cream, and cilantro.
