Ingredients
  

Pasta
  • 12 oz spaghetti or any pasta of choice
Roasted Tomatoes
  • 2 lbs cherry tomatoes halved
  • 4 cloves garlic smashed
  • 2 tbsp olive oil for roasting
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Finishing Touches
  • 1 cup fresh basil chopped
  • 1/2 cup parmesan cheese grated
  • 1 tbsp balsamic vinegar optional

Method
 

Roast the Tomatoes
  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, toss the cherry tomatoes and garlic with olive oil, salt, and pepper.
  3. Spread them out in a single layer and roast for 20-25 minutes until the tomatoes are blistered.
Cook the Pasta
  1. While the tomatoes are roasting, bring a large pot of salted water to a boil.
  2. Add the spaghetti and cook according to package instructions until al dente.
  3. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Combine and Serve
  1. In a large mixing bowl, combine the roasted tomatoes and garlic with the cooked pasta.
  2. Add reserved pasta water as needed to create a sauce.
  3. Stir in the fresh basil, parmesan cheese, and balsamic vinegar if using.
  4. Serve immediately, garnished with extra basil and cheese if desired.

Notes
