  • 1 large butternut squash peeled, seeded, and cubed
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil for roasting
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1/2 teaspoon nutmeg optional
  • 1/2 cup heavy cream for garnish

Method
 

Roasting the Squash
  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed butternut squash with olive oil, salt, and pepper on a baking sheet.
  3. Roast in the oven for 25-30 minutes until tender and caramelized.
Cooking the Soup
  1. In a large pot, sauté the chopped onion and minced garlic until translucent.
  2. Add the roasted butternut squash and vegetable broth to the pot.
  3. Bring to a boil, then reduce heat and simmer for 10 minutes.
Blending and Serving
  1. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  2. Stir in nutmeg and adjust seasoning if necessary.
  3. Serve hot, garnished with a drizzle of heavy cream.
