Ingredients
  

Lamb
  • 1 whole leg of lamb about 4-5 pounds
Seasoning
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons olive oil
  • 1 tablespoon salt to taste
  • 1 teaspoon black pepper freshly ground
Vegetables
  • 2 cups carrots cut into chunks
  • 2 cups potatoes cut into chunks
  • 1 cup onion quartered

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, mix together the minced garlic, chopped rosemary, olive oil, salt, and pepper to create a marinade.
  3. Rub the marinade all over the leg of lamb, ensuring it is well coated.
Roasting
  1. Place the leg of lamb in a roasting pan and surround it with the carrots, potatoes, and onions.
  2. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  3. Remove the lamb from the oven and let it rest for 15 minutes before carving.
Serving
  1. Slice the lamb and serve it with the roasted vegetables.
