Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 2 tablespoons cold water
Filling
  • 2 cups fresh raspberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Method
 

Prepare the Crust
  1. In a mixing bowl, combine flour and sugar. Add cold butter and mix until crumbly.
  2. Add egg yolk and cold water, mix until dough forms. Wrap in plastic and refrigerate for 30 minutes.
  3. Preheat oven to 350°F (175°C). Roll out the dough and fit into a tart pan.
  4. Prick the bottom with a fork and bake for 15 minutes or until lightly golden.
Prepare the Filling
  1. In a saucepan, combine raspberries, sugar, cornstarch, lemon juice, and vanilla.
  2. Cook over medium heat until the mixture thickens and bubbles, about 5-7 minutes.
  3. Pour the filling into the baked crust and spread evenly.
  4. Bake for an additional 15 minutes. Let cool before serving.
