Ingredients
  

Salad Base
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 bell pepper diced any color
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon honey optional
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare Quinoa
  1. In a pot, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes until water is absorbed. Remove from heat and let it sit covered for 5 minutes.
Mix Salad
  1. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
Prepare Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.
Combine
  1. Pour the dressing over the salad and toss gently to combine. Adjust seasoning if necessary.

Notes
