Preparation
- Season the beef chuck roast with salt and black pepper on all sides.
- In a skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
- Transfer the roast to the slow cooker.
- Add the carrots, celery, onion, and garlic around the roast.
- In a bowl, mix the beef broth, Worcestershire sauce, thyme, and rosemary. Pour over the roast and vegetables.
Cooking
- Cover and cook on low for 8 hours or until the meat is tender and easily shreds with a fork.
- Once done, remove the roast and vegetables from the slow cooker. Let the roast rest for a few minutes before slicing.
- Serve with the cooking liquid as a gravy.
