Prepare the Topping
- Preheat the oven to 350°F (175°C). In a small bowl, mix the melted butter, brown sugar, and cinnamon until combined.
- Spread the mixture evenly on the baking sheet. Arrange the pineapple rings on top.
Make the Cookie Dough
- In a mixing bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Assemble and Bake
- Using a cookie scoop, drop spoonfuls of the cookie dough over the pineapple rings on the baking sheet.
- Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
- Remove from the oven and let cool for a few minutes before inverting onto a serving platter.
