Ingredients
  

Pickling Brine
  • 2 cups water
  • 1 cup white vinegar
  • 1 tablespoon salt non-iodized
  • 1 tablespoon sugar optional
  • 1 tablespoon pickling spice
Okra
  • 1 pound fresh okra washed and trimmed
Flavorings
  • 4 cloves garlic peeled
  • 1 teaspoon red pepper flakes adjust to taste
  • 1 teaspoon dill seeds

Method
 

Prepare the Brine
  1. In a saucepan, combine water, white vinegar, salt, sugar, and pickling spice. Bring to a boil, stirring until salt and sugar dissolve.
Pack the Jars
  1. In sterilized mason jars, pack the okra, garlic, red pepper flakes, and dill seeds tightly.
Add the Brine
  1. Pour the hot brine over the packed okra, ensuring they are fully submerged. Leave about 1/2 inch of headspace.
Seal and Store
  1. Seal the jars with lids and let them cool to room temperature. Refrigerate for at least 24 hours before consuming for best flavor.

Notes
