  • ½ cup salted butter softened
  • 1 cup creamy peanut butter
  • 1 tablespoon whole milk
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 large egg
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • ¼ teaspoon baking powder
  • ¼ teaspoon cinnamon
  • 2 tablespoons granulated sugar for coating
  • 24 pieces peanut butter cups frozen

Method
 

Baking Instructions
  1. Unwrap 24 peanut butter cups and place them in the freezer.
  2. In a small bowl, mix together flour, baking soda, sea salt, baking powder, and cinnamon. Set aside.
  3. In a standing mixer, cream together softened butter and peanut butter until smooth.
  4. Add granulated sugar and light brown sugar, and beat until light and fluffy (about 60 seconds).
  5. Add whole milk, egg, and vanilla, and beat for 60 seconds until light in color.
  6. Add the dry ingredients and mix on low speed until combined.
  7. Transfer the dough to an airtight container and chill in the refrigerator for at least 60 minutes.
  8. Preheat oven to 375 degrees F. Line two baking sheets with parchment paper.
  9. Measure 1 ½ tablespoons of dough, roll into a ball, and repeat until the dough is used.
  10. Roll the balls of dough in granulated sugar until evenly coated.
  11. Place the cookies on a baking sheet with at least 1 ½ inches between them.
  12. Bake for 8-9 minutes until the cookies are set and puffed.
  13. Remove from the oven and immediately press one frozen peanut butter cup in the center of each cookie.
  14. Cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
