Ingredients
  

Pasta
  • 12 oz Fusilli pasta or any pasta of choice
Vegetables
  • 1 cup Bell pepper sliced
  • 1 cup Zucchini sliced
  • 1 cup Carrots julienned
  • 1 cup Cherry tomatoes halved
  • 1 cup Broccoli florets
Sauce
  • 3 tbsp Olive oil extra virgin
  • 2 cloves Garlic minced
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
  • 1/2 cup Parmesan cheese grated, optional
Herbs
  • 1 tbsp Fresh basil chopped
  • 1 tbsp Fresh parsley chopped

Method
 

Cook the pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Sauté the vegetables
  1. In a skillet, heat the olive oil over medium heat. Add the garlic and sauté for 1 minute until fragrant.
  2. Add the bell pepper, zucchini, carrots, and broccoli. Sauté for about 5-7 minutes until the vegetables are tender.
  3. Stir in the cherry tomatoes and cook for an additional 2 minutes.
Combine and serve
  1. Add the cooked pasta to the skillet with the vegetables. Season with salt and pepper, and toss to combine.
  2. Remove from heat and stir in the fresh herbs and Parmesan cheese if using. Serve immediately.
