Ingredients
  

  • 3 pieces ripe bananas mashed
  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup chocolate chips mini or regular
  • 2 large eggs
  • 1/2 cup milk dairy or non-dairy

Method
 

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. In a bowl, mash the ripe bananas until smooth.
  3. In another bowl, whisk together oats, flour, sugars, baking powder, and salt.
  4. Add eggs and milk to the banana mixture and mix well.
  5. Gradually add dry ingredients to the wet mixture while stirring gently; fold in chocolate chips.
  6. Spoon batter into muffin tins, filling each about two-thirds full.
  7. Bake for 20-25 minutes until golden brown; check with a toothpick for doneness.
