  • 1 1/2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Salt
Wet Ingredients
  • 1 cup Grated Zucchini Squeeze out excess moisture
  • 1/2 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1/2 cup Vegetable Oil
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
Optional Add-ins
  • 1/2 cup Chopped Nuts Walnuts or pecans
  • 1/2 cup Chocolate Chips

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the dry ingredients: flour, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, mix the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in any optional add-ins like nuts or chocolate chips.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake in the preheated oven for 60 minutes or until a toothpick inserted into the center comes out clean.
  3. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
