Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil for grilling
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Corn Topping
  • 2 cups corn kernels fresh or frozen
  • 1/2 cup mayonnaise or Greek yogurt
  • 1/2 cup cotija cheese crumbled
  • 1 tablespoon lime juice
  • 1 teaspoon smoked paprika
  • 1/4 cup cilantro chopped
  • 1 teaspoon jalapeño finely chopped, optional

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and black pepper.
  3. Rub the spice mixture over the chicken breasts evenly.
  4. Grill the chicken for 6-7 minutes per side or until the internal temperature reaches 165°F (75°C).
Prepare the Corn Topping
  1. In a separate bowl, mix together corn, mayonnaise, cotija cheese, lime juice, smoked paprika, cilantro, and jalapeño (if using).
  2. Set aside until the chicken is done.
Serve
  1. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
  2. Top each chicken breast with the corn mixture and serve immediately.

Notes
