Ingredients
  

Chicken
  • 4 pieces boneless chicken breasts skinless
Corn Mixture
  • 2 cups corn kernels fresh or frozen
  • 1 cup mayonnaise for creaminess
  • 1 cup cotija cheese crumbled
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Toppings
  • 1/4 cup cilantro chopped
  • 1 lime lime wedges for serving

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt, pepper, chili powder, garlic powder, and cumin.
  3. Grill the chicken for 6-7 minutes per side or until fully cooked.
Make the Corn Mixture
  1. In a mixing bowl, combine corn, mayonnaise, cotija cheese, lime juice, chili powder, garlic powder, cumin, salt, and black pepper.
  2. Mix well until all ingredients are combined.
Assemble the Dish
  1. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
  2. Top each chicken breast with the corn mixture.
  3. Garnish with chopped cilantro and serve with lime wedges.
