Ingredients
  

Beans
  • 2 cups pinto beans dried
  • 6 cups water for soaking and cooking
Vegetables
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium tomato chopped
  • 1 medium green bell pepper chopped
Spices
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Liquid
  • 2 cups vegetable broth
Garnish
  • 1/4 cup fresh cilantro chopped
  • 1 lime juice freshly squeezed

Method
 

Prepare Beans
  1. Rinse the pinto beans under cold water and soak them in water for at least 6 hours or overnight.
  2. Drain and rinse the beans again before cooking.
Cook Beans
  1. In a large pot, combine the soaked beans, water, and vegetable broth. Bring to a boil.
  2. Reduce heat to low, cover, and simmer for about 1 hour or until beans are tender.
Add Vegetables and Spices
  1. In a separate pan, sauté the chopped onion, garlic, green bell pepper, and tomato until softened.
  2. Add the sautéed vegetables and spices to the pot with the beans. Stir well and cook for an additional 15 minutes.
Serve
  1. Remove from heat and stir in lime juice and chopped cilantro. Serve warm.
