Ingredients
  

Beans
  • 1 cup dried pinto beans soaked overnight
Vegetables
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium tomato chopped
  • 1 medium bell pepper chopped
Spices
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Liquid
  • 4 cups water

Method
 

Prepare the Beans
  1. Rinse and soak the pinto beans in water overnight.
Cook the Beans
  1. In a large pot, combine soaked beans and water. Bring to a boil.
  2. Reduce heat and simmer for about 1.5 to 2 hours, or until beans are tender.
Add Vegetables and Spices
  1. In the last 30 minutes of cooking, add chopped onion, garlic, tomato, bell pepper, cumin, chili powder, salt, and black pepper.
  2. Stir well and continue to simmer until vegetables are soft.
Serve
  1. Serve hot as a side dish or over rice as a main dish.

Notes

These beans can be made ahead of time and stored in the refrigerator for up to a week. They also freeze well.
