Mango Curd Tart

Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 1-2 tablespoons ice water as needed
Mango Curd Filling
  • 2 ripe mangoes pureed
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/4 cup fresh lime juice
  • 1/4 cup unsalted butter cubed

Method
 

Prepare the Crust
  1. In a mixing bowl, combine flour and powdered sugar. Add cold butter and mix until crumbly.
  2. Stir in the egg yolk and enough ice water to form a dough. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
  3. Preheat the oven to 350°F (175°C). Roll out the dough and fit it into a tart pan. Prick the bottom with a fork.
  4. Bake for 15 minutes or until lightly golden. Remove from oven and let cool.
Make the Mango Curd
  1. In a saucepan, whisk together mango puree, sugar, eggs, and lime juice over medium heat.
  2. Cook, stirring constantly, until the mixture thickens and coats the back of a spoon, about 10 minutes.
  3. Remove from heat and stir in the butter until melted and smooth. Strain the curd through a fine sieve to remove any lumps.
  4. Pour the mango curd into the cooled tart shell and refrigerate until set, about 2 hours.
