Mango Curd Tart

Ingredients
  

Tart Crust
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 2 tablespoons ice water
Mango Curd
  • 2 large ripe mangoes peeled and pureed
  • 1/2 cup granulated sugar
  • 3 large egg yolks
  • 1/4 cup fresh lime juice
  • 1/4 cup unsalted butter cut into pieces
  • 1 teaspoon zest of lime

Method
 

Prepare the Tart Crust
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and powdered sugar.
  3. Add cold butter and mix until the mixture resembles coarse crumbs.
  4. Stir in egg yolk and ice water until the dough comes together.
  5. Press the dough into a tart pan and prick the bottom with a fork.
  6. Bake for 15 minutes or until lightly golden. Let cool.
Make the Mango Curd
  1. In a saucepan, combine mango puree, sugar, and egg yolks.
  2. Cook over medium heat, stirring constantly until thickened, about 10 minutes.
  3. Remove from heat and stir in lime juice, butter, and lime zest until smooth.
  4. Pour the mango curd into the cooled tart crust and smooth the top.
  5. Chill in the refrigerator for at least 2 hours before serving.
