Ingredients
  

Pasta
  • 2 cups elbow macaroni
Tomato Sauce
  • 4 cups fresh tomatoes, diced
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
Garnish
  • 1/4 cup fresh basil, chopped optional
  • 1/4 cup grated Parmesan cheese optional

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Prepare the Sauce
  1. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  2. Add the diced tomatoes, salt, pepper, and oregano. Simmer for about 10-15 minutes until the tomatoes break down and the sauce thickens.
Combine and Serve
  1. Add the cooked macaroni to the skillet with the tomato sauce. Stir well to combine and heat through for an additional 2-3 minutes.
  2. Serve hot, garnished with fresh basil and grated Parmesan cheese if desired.
