Ingredients
  

Pasta
  • 12 oz Pasta (spaghetti or fettuccine)
Sauce
  • 1 cup Ricotta cheese Fresh
  • 1 lemon Zest and juice
  • 1/2 cup Parmesan cheese Grated
  • 2 tbsp Olive oil Extra virgin
  • 1 clove Garlic Minced
  • 1/2 tsp Salt To taste
  • 1/4 tsp Black pepper Freshly ground
  • 1/4 cup Fresh basil Chopped, for garnish

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Prepare the Sauce
  1. In a mixing bowl, combine the ricotta cheese, lemon zest, lemon juice, grated Parmesan cheese, olive oil, minced garlic, salt, and black pepper. Mix until smooth and creamy.
Combine Pasta and Sauce
  1. In a skillet over medium heat, add the drained pasta and the ricotta sauce. Toss to combine, adding reserved pasta water a little at a time until the sauce reaches desired consistency.
Serve
  1. Serve the pasta warm, garnished with chopped fresh basil and additional Parmesan cheese if desired.
