Ingredients
  

Pasta
  • 1 cup orzo pasta uncooked
Sauce
  • 2 tablespoons olive oil
  • 1 medium lemon zested and juiced
  • 1 clove garlic minced
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
Herbs and Vegetables
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh basil chopped
  • 1/4 cup cherry tomatoes halved

Method
 

Cooking the Orzo
  1. Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente.
  2. Drain the orzo in a colander and set aside.
Preparing the Sauce
  1. In a mixing bowl, combine olive oil, lemon zest, lemon juice, minced garlic, salt, and black pepper. Whisk until well combined.
Combining Ingredients
  1. Add the cooked orzo to the bowl with the sauce. Toss to coat the orzo evenly.
  2. Fold in the chopped parsley, basil, and halved cherry tomatoes.
Serving
  1. Serve the lemon orzo pasta warm or at room temperature, garnished with additional herbs if desired.
