Ingredients
  

Quinoa and Asparagus
  • 1 cup quinoa rinsed
  • 1 bunch asparagus trimmed and cut into 2-inch pieces
  • 2 cups water for cooking quinoa
Lemon Garlic Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 teaspoon honey optional
Garnish
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon lemon zest

Method
 

Prepare Quinoa
  1. In a pot, bring 2 cups of water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork and set aside.
Cook Asparagus
  1. In a pan, bring a small amount of water to a boil. Add asparagus and cook for 3-4 minutes until bright green and tender-crisp. Drain and rinse under cold water to stop cooking.
Make Dressing
  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, honey, salt, and pepper until well combined.
Combine Ingredients
  1. In a large bowl, combine cooked quinoa, asparagus, and dressing. Toss gently to combine.
  2. Garnish with chopped parsley and lemon zest before serving.
