Ingredients
  

Vegetables
  • 2 tablespoons olive oil for sautéing
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can crushed tomatoes 28 oz
  • 2 cups vegetable broth or chicken broth
  • 1 teaspoon sugar to balance acidity
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1/4 cup heavy cream optional for creaminess
  • 1 tablespoon fresh basil for garnish

Method
 

Prepare the Soup
  1. Heat olive oil in a saucepan over medium heat. Add chopped onion and sauté until translucent.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the crushed tomatoes, vegetable broth, sugar, salt, and pepper. Bring to a boil.
  4. Reduce heat and let it simmer for 20 minutes, stirring occasionally.
  5. Use a blender to puree the soup until smooth. Return to the saucepan.
  6. Stir in heavy cream if using, and heat through.
  7. Serve hot, garnished with fresh basil.
