  • 2 cups Bread flour
  • 1 cup Greek yogurt
  • 1 packet Active dry yeast
  • 1 cup Warm water
  • 1 tbsp Honey or sugar
  • 1 tsp Salt
  • 1 cup Fresh or frozen blueberries
  • 1 tbsp Cornstarch
  • 1 tbsp Sesame seeds or poppy seeds
  • 1 egg Egg wash (egg + water)

Method
 

  1. In a mixing bowl, combine bread flour, Greek yogurt, active dry yeast, warm water, honey or sugar, and salt to form a dough.
  2. Knead the dough until smooth and elastic.
  3. Incorporate the blueberries and cornstarch gently into the dough.
  4. Shape the dough into bagels and place them on a baking sheet.
  5. Let the bagels rise until doubled in size.
  6. Preheat the oven to 375°F (190°C).
  7. Brush the bagels with egg wash and sprinkle with sesame seeds or poppy seeds.
  8. Bake for 25 minutes or until golden brown.
