Ingredients
  

Shrimp and Grains
  • 1 pound shrimp peeled and deveined
  • 1 cup quinoa rinsed
  • 2 cups water for cooking quinoa
Vegetables
  • 1 cup bell pepper diced
  • 1 cup broccoli cut into florets
  • 1 cup carrots sliced
  • 1 cup snap peas
Sauce
  • 3 tablespoons soy sauce low sodium
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon ginger grated
  • 1 clove garlic minced
Garnish
  • 2 tablespoons green onions sliced
  • 1 tablespoon sesame seeds

Method
 

Prepare Quinoa
  1. In a pot, bring 2 cups of water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork.
Cook Shrimp and Vegetables
  1. In a large skillet, heat sesame oil over medium heat. Add garlic and ginger, sauté for 1 minute.
  2. Add shrimp and cook until pink, about 3-4 minutes. Add bell pepper, broccoli, carrots, and snap peas. Stir-fry for another 5 minutes.
  3. Pour in soy sauce and honey, stir to combine, and cook for an additional 2 minutes.
Assemble Bowls
  1. Divide quinoa among bowls, top with shrimp and vegetable mixture. Garnish with green onions and sesame seeds.
