Ingredients
  

Shrimp and Vegetables
  • 1 lb shrimp, peeled and deveined large shrimp preferred
  • 2 cups broccoli florets
  • 1 cup bell pepper, sliced any color
  • 1 cup carrot, julienned
  • 2 tbsp olive oil for cooking
Sauce
  • 3 tbsp soy sauce low sodium recommended
  • 1 tbsp honey or maple syrup
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
  • 1 tbsp sesame oil for flavor
Garnish
  • 2 tbsp green onions, sliced for topping
  • 1 tbsp sesame seeds for topping
Base
  • 2 cups brown rice or quinoa cooked

Method
 

Prepare the Ingredients
  1. Chop all vegetables and set aside.
  2. In a small bowl, mix together soy sauce, honey, ginger, garlic, and sesame oil to create the sauce.
Cook the Shrimp and Vegetables
  1. Heat olive oil in a skillet over medium heat.
  2. Add the broccoli, bell pepper, and carrot; sauté for about 5 minutes until tender.
  3. Add the shrimp and cook until they turn pink, about 3-5 minutes.
  4. Pour the sauce over the shrimp and vegetables, stirring to coat evenly.
Assemble the Bowls
  1. Divide the cooked rice or quinoa among serving bowls.
  2. Top with the shrimp and vegetable mixture.
  3. Garnish with green onions and sesame seeds before serving.
