  • 1 head Green cabbage finely shredded
  • 2 medium Carrots finely shredded
  • 1 head Red cabbage finely shredded
  • 1/4 cup Apple cider vinegar
  • 2 tablespoons Olive oil
  • 2 tablespoons Honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Celery seeds
  • 1/4 cup Pumpkin seeds
  • 1/4 cup Fresh herbs like parsley or cilantro

Method
 

  1. In a large bowl, combine the green cabbage, red cabbage, and carrots.
  2. In a separate bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, and celery seeds.
  3. Pour the dressing over the cabbage and carrot mixture, and toss to coat.
  4. Add the pumpkin seeds and fresh herbs, and mix until evenly distributed.
