Ingredients
  

Salad Base
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup black olives sliced
  • 1/4 cup parsley chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 clove garlic minced

Method
 

Prepare Quinoa
  1. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let it sit covered for 5 minutes.
Make Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, oregano, minced garlic, salt, and pepper.
Combine Ingredients
  1. In a large mixing bowl, combine cooked quinoa, cucumber, cherry tomatoes, red onion, feta cheese, black olives, and parsley.
  2. Pour the dressing over the salad and toss gently to combine. Adjust seasoning if necessary.
Serve
  1. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
