Ingredients
  

For the Piña Colada Rings
  • 1 large pineapple peeled, cored, and cut into rings
  • 1 cup all-purpose flour
  • 1 cup coconut flakes sweetened
  • 1 cup coconut milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 2 cups vegetable oil for frying
  • 1 cup powdered sugar for dusting

Method
 

Prepare the Batter
  1. In a mixing bowl, whisk together the flour, coconut flakes, baking powder, and salt.
  2. In another bowl, combine the coconut milk, egg, and vanilla extract.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Fry the Rings
  1. Heat the vegetable oil in a deep fryer to 350°F (175°C).
  2. Dip each pineapple ring into the batter, allowing excess to drip off.
  3. Carefully place the battered rings in the hot oil and fry until golden brown, about 3-4 minutes per side.
  4. Remove the rings with tongs and drain on paper towels.
  5. Dust with powdered sugar before serving.
