Ingredients
  

Chicken
  • 4 pieces chicken thighs bone-in, skin-on
  • 2 cups buttermilk for marinating
Breading
  • 1 cup all-purpose flour for coating
  • 1 tablespoon paprika for flavor
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper optional for heat
Frying
  • 4 cups vegetable oil for frying

Method
 

Marinate Chicken
  1. Place chicken pieces in a large bowl and cover with buttermilk. Marinate in the refrigerator for at least 2 hours, preferably overnight.
Prepare Breading
  1. In a separate bowl, mix flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
Coat Chicken
  1. Remove chicken from buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating.
Heat Oil
  1. In a deep frying pan, heat vegetable oil to 350°F (175°C).
Fry Chicken
  1. Carefully add chicken pieces to the hot oil, cooking in batches if necessary. Fry for 12-15 minutes, turning occasionally, until golden brown and cooked through.
Drain and Serve
  1. Remove chicken from oil and place on paper towels to drain excess oil. Serve hot.
