Ingredients
  

Egg Mixture
  • 8 large eggs
  • 1/4 cup milk optional for fluffiness
  • 1 cup shredded cheese cheddar or your choice
Filling Options
  • 1 cup cooked sausage crumbled
  • 1 cup cooked bacon crumbled
  • 1 cup bell peppers diced
  • 1 cup onion diced
Wrap
  • 4 large flour tortillas or whole wheat

Method
 

Prepare the Egg Mixture
  1. In a mixing bowl, whisk together the eggs and milk until well combined.
  2. Heat a skillet over medium heat and pour in the egg mixture.
  3. Cook, stirring gently, until the eggs are scrambled and just set. Remove from heat.
Cook the Fillings
  1. In the same skillet, add the diced onions and bell peppers. Sauté until softened.
  2. Add the cooked sausage and bacon, stirring to combine and heat through.
Assemble the Burritos
  1. Lay a tortilla flat and add a portion of the egg mixture and filling in the center.
  2. Sprinkle with shredded cheese, then fold in the sides and roll tightly to enclose the filling.
Freeze the Burritos
  1. Wrap each burrito in aluminum foil and place in freezer bags.
  2. Label and date the bags, then store in the freezer for up to 3 months.
