Ingredients
  

Chicken Marinade
  • 1 lb boneless, skinless chicken breasts sliced into strips
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Vegetables
  • 1 medium bell pepper sliced
  • 1 medium onion sliced
  • 1 tablespoon olive oil
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream
  • 1 cup salsa
  • 1 cup tortillas for serving

Method
 

Marinate Chicken
  1. In a bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper. Add chicken strips and toss to coat. Let marinate for at least 15 minutes.
Cook Chicken
  1. Preheat the flat top grill over medium-high heat. Add the marinated chicken strips and cook for about 5-7 minutes, flipping occasionally, until fully cooked.
Cook Vegetables
  1. Add olive oil to the grill, then add the sliced bell pepper and onion. Cook for about 5-7 minutes until softened and slightly charred.
Assemble Fajitas
  1. Serve the cooked chicken and vegetables on warm tortillas, topped with cheese, sour cream, and salsa.
