  • 1 heart romaine, chopped
  • 1 small head radicchio, cored and chopped
  • 1 pint cherry tomatoes, halved
  • 1 large red or yellow bell pepper
  • 10 Pepperoncini, thinly sliced
  • 1 small cucumber, diced
  • 12 ounces mini mozzarella balls, drained and halved
  • 1 cup freshly shaved Parmesan cheese
  • ¾ cup pitted black olives, halved
  • 6 ounces salami, cut into matchsticks
  • ½ cup pickled red onions
  • 1 ounce fresh basil leaves, sliced into ribbons

Preparation
  1. In a large bowl, whisk together the olive oil, red wine vinegar, minced garlic, Dijon mustard, lemon juice, oregano, sea salt, and black pepper to make the dressing.
  2. Add the chopped romaine, radicchio, cherry tomatoes, bell pepper, sliced Pepperoncini, cucumber, mozzarella balls, Parmesan cheese, black olives, salami, pickled red onions, and basil to the bowl.
  3. Toss the salad gently until all ingredients are evenly coated with the dressing.
  4. Serve immediately or refrigerate until ready to serve.
