  • 1 cup mixed vegetables frozen or fresh
  • 2 tablespoons soy sauce low sodium preferred
  • 1 tablespoon olive oil for cooking
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated optional
  • 1 cup cooked rice for serving

Method
 

Cooking the Stir-Fry
  1. Heat olive oil in a skillet over medium heat.
  2. Add the diced chicken breast and cook until browned, about 5-7 minutes.
  3. Stir in the garlic and ginger, cooking for an additional minute.
  4. Add the mixed vegetables and soy sauce, cooking until vegetables are tender, about 5 minutes.
  5. Serve hot over cooked rice.
